The street food culture is underrated.
The thin, crispy waffle sandwich with caramel syrup inside β placed over a hot drink to soften β is the Netherlands' great sweet contribution to the world. From the Gouda market, where they originated, they are best eaten fresh and hot from a street stall.
The traditional Dutch way to eat new season herring (hollandse nieuwe) β holding the fish by the tail, tilting the head back, and lowering it into the mouth with chopped raw onion and pickles. It sounds alarming and tastes excellent.
